Our mince pie starts with heritage apple varieties picked by yours truly at Brimstage Orchard, golden sultanas & Alexia raisins. The fruit is steeped in honey mead from the Lancashire Mead Company, then bejewelled post cook with poached quince, organic house-made candied peel and single-origin spices. All brought together with beef suet from Storeton Belties, grass-fed and free-range cattle reared just two miles from the bakery. No ultra processed Atora here. Its all encased in a pastry that’s closer to a shortbread biscuit, made with organic stoneground flour, beremeal and quality cultured butter.
